PCBA for out of stock component

Hello,

I am currently preparing for a project that involves very complex components like high pin count FPGA and MCU's and was wondering if JLCPCB doesn't a component or any similar components in stock, does that mean I just cant order it at all or can components be ordered in (all be it, with a longer wait time for the PCB and potentially an increase in cost)
